Step 1 Cook noodles in a large saucepan of boiling water following packet directions or until just tender, adding the Chinese broccoli for the last 2 mins of cooking. Drain well.
Step 2 Heat oil in a wok or large frying pan over high heat. Add mince and cook, stirring with a wooden spoon to break up lumps, for 3-4 mins or until mince changes colour. Add spring onion and stir-fry for 1 min or until well combined. Add the plum sauce, oyster sauce and lemon juice. Stir-fry for 3-4 mins or until the mixture thickens and the mince is cooked through.
Step 3 Divide the noodle mixture evenly among serving bowls. Top with the mince mixture and sprinkle with coriander and chilli, if using.
